Like the Bresse farm or Bresse chicken, Bleu de Bresse cheese is part of the region’s heritage.
The origins of this creamy blue-veined cheese are closely linked to Italian immigration to the Lyon region in the 1950s. At that time, Gorgonzola stopped being exported to France. To make up for this, Italian immigrants and cheese-makers decided to team up with Bresse dairies to create a new cheese inspired by the Italian recipe.
This was the precursor recipe for Bleu de Bresse, a name that has now become generic. In 1952, a cheese dairy in Servas (Ain) registered a trademark for Bleu de Bresse, the famous “Bresse Bleu”. In addition to its expertise in the production of high-quality Bleu de Bresse, the Servas cheese dairy also stands out for its close relationship with its milk producers.
These producers, grouped together in a single cooperative that belongs to them, are all located less than 45 km from the cheese dairy. Working on human-sized farms, with a strong commitment to the environment and animal welfare, these producers guarantee a high-quality raw material, essential for the production of Bresse Bleu, as well as Domaine de Bresse, another cheese made by the Fromagerie.
All this contributes to the region’s dynamic economic fabric and rich gastronomic heritage.
